First off, what is Romesco sauce? It’s a sauce that originated in Spain and was first made by the fishermen to serve with fish. It’s tomato based with garlic, almonds (or other nuts), sherry vinegar, peppers, and oil, amongst other ingredients. It’s also common for bread to be puréed with it as a thickener. To paint that picture, I’ve had this at restaurants and it’s just lovely. I wasn’t sure how this would translate but I have to be honest, it’s fabulous. It’s bright and vibrant with great texture and flavor. I served this on grilled chicken and salmon, on sandwiches, on my eggs, as a dipping sauce with crackers, etc. It is so versatile and elevates just about everything you serve this with!
