Lamb Kabobs

July 29, 2014 by lindsaylcallaway |

It's so interesting how I find myself in food ruts. There are very few things I don't like, yet I gravitate towards the same things. For instance, I often cook chicken, steak, ground turkey/chicken  but rarely cook pork, lamb, seafood, etc. I

Homemade Ice Cream Part 2

July 16, 2014 by lindsaylcallaway |

As promised, I challenged myself to make the more "complex" version of ice cream from my previous post. After doing a little research I found that this more complex method is called French-style ice cream, that is, using egg yolks to create a richer,

Blue Cheese Bacon Potato Salad

July 10, 2014 by lindsaylcallaway |

I am notorious for taking a great recipe and putting my own spin on it. Mostly because I don't follow the directions very well and also I improvise based on my taste preference or what I have in my fridge. My sister Cate makes a great potato salad

Homemade Ice Cream

July 5, 2014 by lindsaylcallaway |

I remember getting a list of recommended cooking tools from my chef instructor for class. As a broke college student I took my list and headed to Sur la table, praying I could make it out of there without spending more than $20. After collecting

Taste Test Tuesday: @traderjoes marshmallow eggs ( Taste Test Tuesday: @traderjoes marshmallow eggs (Peeps Dupe)

Naturally a trip for 3 items at Trader Joe’s (with all 3 boys) turned into a full snack haul 😜

Graham wanted to do this completely solo but I had to try it for myself! We both highly recommend trying!

Carmelitas bars have our entire heart. It’s my go- Carmelitas bars have our entire heart. It’s my go-to dessert! For one, I always have the ingredients on hand. There’s also no prep like softening butter or eggs so it’s ready to bake when you are. The couple steps involved are easy and the cleanup is one bowl.

I had my little helper in the Kitchen and I couldn’t bring myself to silence his little voice. He’s almost 3 and in my favorite toddler sweet spot! Recipe below!

Carmelitas Cookie Bars:
3/4 cup butter, melted
3/4 cup brown sugar, packed
1 tsp vanilla powder (@eatbeyondgood or 1 tbl extract)
1 cup flour
1 cup rolled oats
1 tsp baking soda
1/2 tsp salt
1/2 jar salted caramel sauce (Trader Joes, about 5oz)
1 cup chocolate chips

Directions:
Preheat oven to 350 degrees and line an 8x8 pan with parchment paper and cooking spray.
Melt butter and whisk brown sugar and vanilla until smooth.
Add the flour, oats, salt, and baking soda and stir until combined.
Add half the mixture to the pan and smooth out. (It doesn’t feel like it will cover the bottom but keep pressing!)
Bake for 10 minutes.
Top with the caramel sauce, (heating it makes it easier to drizzle, don’t follow my example!) chocolate chips, and the crumbled remaining mixture.
Bake for 15-18 minutes and let cool completely before cutting.

Enjoy!
If you’re still in Christmas cookie baking mode, m If you’re still in Christmas cookie baking mode, may I suggest these chewy molasses cookies from @loveandlemons 🙌🏼 I add a touch more ginger but these are crispy and chewy and the sugary exterior cuts the lovely spice! I’ve been making these for a year but it gives a nod to gingerbread cookies but better, in my opinion!

I’m always tempted to remove all the sound and overlay a soothing song but I want to remember these days of baking with constant little chatter in the kitchen with me. 🫶

Taste Test Tuesday: candied cranberries I’ve see Taste Test Tuesday: candied cranberries

I’ve seen people making variations of these recently and needed to see what the fuss was about. My opinion: these disappointed me! I didn’t soak them in pop like some people advised but I still don’t love the taste/texture combo. I froze a few to see what sort of experience that will be! But as is, this wasn’t for me!

I think this same method but coating in granulated sugar would make for a beautiful cocktail garnish!

Have you tried these? What’s your take?!
